The proof is in the pudding! Well… In this case, we are talking about lasagna. So I will share this tasty lasagna recipe with you, and you will see for yourself that this is a keeper!
5 Cups Boiled Lentil
1 Pack Of Lasagna Noodles
1 Cup Coconut Cream/Milk
3 Cups Tomato Paste
2 Ripe Tomatoes (Chopped)
6 Tablespoons Large Onion
6 Tablespoons Chopped Sweet Peppers
3 Tablespoons Vegetable Butter
Herbs And Spices Of Your Choice
Salt To Taste
You will want to boil the lasagna noodles. You cannot put them in the oven uncooked for this recipe. So boil them properly and put for cooling.
In a bowl, onions, peppers, tomatoes and boiled lentil. Put herbs and spices of your desire. Basil and oregano are two good options. Incorporate the coconut milk or cream and add salt to taste.
Grease a baking dish to prepare it for baking the lasagna. A square or rectangular-shaped baking dish is always better for baking lasagna, as the noodles will hold better and you will also get to cut square and rectangular-shaped slices when the lasagna is finished baking.
Get the oven prepared too by heating it at 350F.
Make a base layer at the bottom of the baking dish by placing some of the lasagnas noodles. Place them properly. You can even do a double layer, as you are setting the foundation of the lasagna and this will help to determine how well the slices will hold up.
Put a small amount of butter on the of noodles in the middle. You can do this for all the layers of noodles you will continue to make while setting up your lasagna.
Cover the layer with tomato paste. Use a generous amount of tomato paste, as this is what will help to flavor the lasagna and make it delicious.
Add the mixture of lentil and vegetables on top of the noodles. Make sure to spread this mixture to cover all the noodles.
Add another layer of noodles on top of the layer of lentil, veggies, and spices. Repeat steps 5, 6 and 7. Then keep adding layers and repeating the steps until your lasagna reaches the size you want it to be.
Seal off your lasagna by making a final layer at the top with noodles, and covering it with butter, herbs, spices and tomato paste.
Cover the baking dish with foil wrap and bake for 30 to 40 minutes in the oven.
Lasagna tastes the best when it is still warm. So you might want to serve it while there is still some heat in it. You can still enjoy leftovers though. Just make sure to reheat in the oven with a little butter before serving.
